Chimichurri recipe

Chimichurri is the most popular sauce used in Argentina. It has a predominently garlic flavor and is great when used with beef and all kinds of barbecue styles. Chimichurri is a sauce used to marinate meat before and/or after grilling the meat. Chimichurri is vastly used in Argentine cuisine.

How to make chimichurri

Chop parsley, dried oregano, and add chopped garlic,salt and pepper and mix all ingredients with good quality olive oil. Onions should be added at the end of the process. Paprika could be added as an option. If you want to add a kick then add vinegar . In Argentina chimichurri is used to pair with asados.

1/2 cup olive oil
2 tablespoons fresh lemon juice
1/3 cup minced fresh parsley
1 clove garlic
2 minced shallots
1 teaspoon minced basil, thyme or oregano, or mixture
Salt and pepper to taste

After combining all ingredients let sit for at least 2 hours before serving.
